Summer Holidays

Now that the school year has ended all of us will start going to the beach. It is important to remember to keep our beaches clean and think of all the sea animals that get sick from all the plastic and litter we leave on the beaches.

The National Geographic for Kids offers various resources in teaching children about plastic pollution.

Here is also a Powerpoint called “Is Plastic Fantastic?”, where it shows the damage plastic has caused and is dedicated to all sea life

Lastly it was a wonderful experience teaching you this semester, even though we did not meet physically, the online learning experience was still fruitful. I will miss teaching all of you!!

Just remember to sanitise and wash your hands, wear a mask and stay safe 🙂

Oatmeal and Raisin Cookies

Following the recipe post “What Cookie Recipe Should We Try”, we have a winner from the Mentimeter results! Today we are going to be making delicious Oatmeal and Raisin Cookies. Make sure to send me a video or photos of you making the cookies and a photo of the finished cookies.

Ingredients:

•1 cup (100g) instant oats

¾ cup (90g) whole flour

•1 ½ tsp baking powder

•1 ½ tsp ground cinnamon

•⅛ tsp salt

•2 tbsp (28g) coconut oil, melted and cooled slightly

•1 large egg, room temperature

•1 tsp vanilla extract •½ cup (120mL) honey

•¼ cup (40g) raisins

Method:

•Preheat the oven to 180°C, and line a baking sheet with parchment paper

•Whisk together the oats, flour, baking powder, cinnamon, and salt in a medium bowl.

•In a separate bowl, whisk together the coconut oil, egg, and vanilla. Stir in the honey.

•Add in the flour mixture, stirring just until incorporated. Fold in the raisins. Chill the cookie dough for 30 minutes.

  •Drop the cookie dough on the tray and cook for 15 minutes in the oven
